Smoked cheese pasta bake

I've been eating a lot of smoked cheese recently. Don't ask why - never ask anyone why when it comes to cheese. It's cheese right?

Anyway I had a block left and had kind of gorged so thought about what I could make with it.

Pasta bake was the easiest, and first, thing that came to mind.

So i gathered together:

Cooked rigatoni

Olive oil

Tinned tomatoes

Basil

Fresh tomatoes

Shallots

Garlic

Pinch of sugar

Smoked cheese cut into chunks.

I made the sauce wth the tinned tomatoes, oil, shallot, garlic, basil and sugar - you want it a little bit runny as the pasta will soak a lot of it up in the oven. Like this:

Tip pasta and tomato sauce nto an ovenproof gratin dish and tuck in cubes of the smoked cheese. I sliced a fresh Russian Black tomato from the garden for the top then grated a little more smoked cheese over the top.

Medum hot oven for half an hour and it was amazing - sweet and smoky and rich.
